Anna Katharine Mansfield is an Associate Professor of Enology and Associate Director of Cornell AgriTech (formally the New York State Agriculture Experiment Station) in Geneva, NY. As an Associate Professor of Food Science, Professor Mansfield has led craft beverage research, extension, and education programming for producers across the state since 2009. Her research efforts focus in particular on projects designed to help regional and small-scale wineries improve wine quality and enhance production efficiency. This applied work involves enology extension, wine sensory evaluation, and research on hybrid wine phenolics and fermentation nutrition. After 12 years at Cornell, Professor Mansfield was appointed Associate Director of AgriTech in April 2021. She earned a B.A. from Salem College, an M.S. from Virginia Tech, and a Ph.D. from the University of Minnesota, Twin Cities, where she served as the first Enology Project leader from 2001 to 2008.

In this webcast, you’ll explore the mineral characteristic of wine from the viewpoints of three experts: an enologist, or wine scientist; a sommelier; and a wine judge. Although the terms “mineral” and “minerality” are often used as wine descriptors, there is much debate over whether it indicates aromas and flavors of wet stones, salinity, and gravel — or simply a lack of aromas and flavors. Is it a palate sensation, like high acid? Or is it attributable to winemaking technique? Can we actually taste the soil in these wines?

Annemarie Morse is an experienced wine professional with over 13 years of involvement in the wine industry. As an educator, Ms. Morse has lectured on wine studies and marketing at the college level and guest-lectured at Cornell University for various courses. She also writes about wine and food and is currently the Finger Lakes correspondent for the Cork Report, an online publication that highlights news, reviews, and commentary about the lesser-known regions of North American wine country. Ms. Morse is an International OIV Certified Wine Judge, having judged for amateur and commercial wine competitions for over 10 years. She is the Director-Elect of Education for the American Wine Society, the largest consumer wine education organization in America, with 7000 members. Her company, Wine By Annemarie, LLC, offers wine seminars and tours both locally and around the world. Ms. Morse holds a Master’s degree in Enology from Cornell University.
Born & bred in New York, Thomas studied neurobiology and classical piano at Cornell University, and all the while worked in restaurants to pay-off his student loans. In January 2011, Thomas diverted from his path toward a medical career, and took on the role of Wine Director at Chef Tom Colicchio’s restaurant Colicchio & Sons in New York City, and would soon thereafter join the team behind world-renowned Eleven Madison Park to create The NoMad in Spring 2012. He opened The NoMad as its Wine Director & helped it achieve its 3-Star New York Times rating within a few months of its opening, later moving into the role of Executive Wine Director of all of the NoMad properties. In the years since, Thomas was chosen as a Best New Sommelier by Wine & Spirits Magazine, recognized as one of Forbes’ 30 Under 30, and was named one of Food & Wine’s Sommeliers of the Year. Additionally, Thomas has gotten into the world of winemaking, launching three exciting new wine labels: Terrassen in 2013, Empire Estate in 2014, and VINNY in 2018, all with a focus on New York’s rising upstate wine region, the Finger Lakes. Thomas joined Grand Cru Selections, a fine wine importer, in the Summer of 2021 as its VP of Sales & Hospitality, excited to bring his passion & experience in the wine & restaurant industry over to the world of imports & distribution, through the lens of the exciting portfolio that Grand Cru Selections has grown & curated over its years in business.
